I'd have to go with Record of Lodoss War TV, with Cowboy Bebop and Love Hina as close seconds.

Black Heaven and Outlaw Star have the rockin' opening tunes that always start things off well. Gotta love the opening to Excel Saga as well. =)

I loved the one for Bebop, just cause it's a catchy tune and it's different from everything else. I do know alot of people who don't like the Bebop theme though.

Legend of Galactic Heroes (Pick a season) is my top opening and closing.

Second would be Kodomo No Omocha, Love Hina, or Brother Dear Brother

"We Are" from One Piece is a great opening. I really like Chala Head Chala from Dragonball as well.

I like the Bebop intro. It's very unique, and catchy. Also for some strange reason I find myself liking the Lupin the 3rd intro. Maybe it's the catchy little one line thing.
